What You Need to Know
The smoke contains phenolic compounds such as guaiacol and syringol that, when heated to 70‑90 °C, undergo oxidation to form antimicrobial agents that inhibit spoilage bacteria. The controlled temperature and duration allow these compounds to penetrate the fish flesh without denaturing proteins, thereby preserving texture and flavor.
