mix meat, chopped water chestnuts, chopped vegetables, dressing and egg yolk until well blended. spoon onto won ton wrappers, adding about 1 tsp. of the meat mixture to each. beat egg white lightly. brush lightly onto edges of 1 wrapper; fold diagonally in half. press edges together to seal. bring opposite corners of long edge of triangle together, overlapping points; brush with egg white to seal. repeat with remaining won ton wrappers and filling. combine remaining ingredients in large saucepan. bring just to boil on medium heat. gently add won tons; simmer 4 min. or until meat filling is done, stirring occasionally.
