to make doughnuts: preheat the oven to 325 degrees f. mix the flours, baking powder, salt, and cinnamon in a mixing bowl. set aside. in another bowl, combine the melted butter, milk, vanilla and maple syrup. then add the wet ingredients to the dry ingredients and mix until combined. put the mixture into a piping bag or a ziplock bag with the tip cut off, and pour into a pre-sprayed doughnut pan. bake doughnuts for 20-25 minutes or until browned and slightly firm to the touch. once done, let stand to cool for 20 minutes. to make glaze: stir together 1/2 cup confectioners sugar, 2 tablespoons cocoa powder, and 1 tablespoon milk. once mixed well, distribute the glaze generously onto doughnuts.
