Preheat the oven to 425 F. Rub salmon with Cajun seasoning and put it onto a lightly greased rimmed baking sheet. Bake for 20 to 25 minutes or until fish is cooked through. Meanwhile, add cabbage, red onion, carrot, and green onions to large bowl. In a medium bowl, whisk together remaining coleslaw ingredients (from oil to ground pepper). Mix to combine then add liquid ingredients to cabbage mixture and toss to combine well. Taste for seasoning, and adjust as necessary. When its done remove the salmon from the oven and put it onto a cutting board. Cut salmon into bite size pieces. Place salmon in tortillas, top with coleslaw and enjoy!
