Preheat oven to 450 degrees F. Line a rimmed baking sheet with foil and top with a cooling rack. Set aside. In one bowl, combine bread crumbs, panko bread crumbs, Parmesan cheese, and all spices. Set aside. In a second bowl, combine egg, yogurt, hot sauce, and Dijon mustard. Take shrimp, dip them into egg mixture first, then coat well with the bread crumb mixture. Place on a cooling rack and give it a spray with olive oil cooking spray (this will help them crisp up well). Bake for 4 minutes on the first side. Flip, spray with olive oil spray, and bake an additional 4 minutes on the other side. Turn on the broiler and broil for 2 minutes to get them extra crispy and yummy. Enjoy with homemade cocktail sauce!
