Studies on the Glycosidases in Jack Bean Meal

Abstract
Abstract β-N-Acetylglucosaminidase, α-mannosidase, and β-galactosidase were simultaneously separated from jack bean meal extract by means of isoelectric focusing technique. These glycosidases were isolated and purified 80- to 170-fold with yields of 40 to 60%. pI values of these enzymes were found to be 4.8, 6.2, and 8.4, respectively.
