The low‑temperature smoke deposits phenolic compounds such as guaiacol and syringol onto the meat surface, providing antioxidant and antimicrobial activity. During the final stage of smoking, Maillard reactions between reducing sugars in the spice paste and meat amino acids generate melanoidins and volatile flavor compounds, creating the characteristic brown crust and smoky aroma. The combined thermal dehydration and phenolic deposition reduce water activity below 0.85, extending shelf life at ambient temperatures.
